Our sustainability actions

 

The WAGYU 1129 restaurant has been renovated while keeping its original shape.

 

On the ground floor, the 120 year old bricks have been left exposed and painted with a transparent coating to preserve their original beauty.

 

The cracks in the walls were repaired using the traditional Japanese technique of KINTSUGI (repairing broken vessels using lacquer (tree sap) and gold dust). Please see photos.

 

In the basement, the counter table is made of Japanese ginkgo wood, stained with sumi ink to give it a tasteful look. Also the ground floor stone wall was polished and used as a table.

 

The Japanese spirit of "Mottainai" (anti-waste) has been replaced by the concept of sustainability.

 

We hope you enjoy this traditional Japanese technique and feel the spirit of Mottainai = sustainability.

In the event of a cancellation made less than 24 hours in advance or a no-show, a fee of €120 per person will be charged.

If you have any dietary restrictions or would like to request a specific menu, such as a vegetarian, vegan, or pescatarian option, we kindly ask that you inform us at least one day in advance to ensure the best possible service. Please note that we may not be able to accommodate last-minute requests made on-site.

To reserve a table for Shabu-Shabu, please mention “Shabu-Shabu” in the comments section when making your reservation, after selecting the date and time.

​

Please note that we reserve the right to refuse payment by check or €500 banknotes.
